Summer Wheat Berry Salad with Lemon Herb Vinaigrette

This wheat berry salad is one of those. There is the citrus bite of the lemon vinaigrette hitting the warm grain. The snap of cucumber. The grassy sweetness of fresh herbs. And underneath all of it, the quietly satisfying chew of whole wheat berries that somehow makes every other ingredient taste more like itself.

It takes about 20 minutes of active time — most of the work is the wheat berries cooking low and slow while you get on with your day. Make a big bowl on the weekend and you have lunches sorted for the week.

Why Wheat Berries Work So Well in Salads

Most grains get soft and clumpy when they sit in dressing overnight. Wheat berries do not. Their hearty outer bran layer keeps the kernel firm and pleasantly chewy even after two or three days in the fridge, which makes them genuinely ideal for meal prep.

They are also one of the most nutritious grains you can use as a base. Summer Wheat Berry Salad with Lemon Herb Vinaigrette

Ingredients

For the salad:

     1 cup organic hard red wheat berries, rinsed

     1 English cucumber, diced

     1 cup cherry tomatoes, halved

     ½ red onion, finely diced

     1 cup flat-leaf parsley, roughly chopped

     ¼ cup fresh mint leaves, torn

     ⅓ cup crumbled feta cheese (optional)

     3 tablespoons toasted pumpkin seeds

For the lemon herb vinaigrette:

     3 tablespoons extra-virgin olive oil

     2 tablespoons fresh lemon juice (about 1 large lemon)

     1 teaspoon lemon zest

     1 teaspoon Dijon mustard

     1 small garlic clove, minced

     ½ teaspoon honey or maple syrup

     Salt and black pepper to taste

Instructions

1.   Cook the wheat berries. Place the rinsed wheat berries in a medium pot and cover with 3 cups of cold water. Bring to a boil, then reduce to a gentle simmer. Cover partially and cook for 50–60 minutes, until tender but still pleasantly chewy. Drain any remaining water and spread on a baking sheet to cool.

2.   Make the vinaigrette. In a small jar or bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon, garlic, and honey. Season with salt and pepper. Taste and adjust — it should be bright and lemony.

3.   Prep the vegetables. While the wheat berries cool, dice the cucumber, halve the tomatoes, and finely dice the red onion. Chop the parsley and tear the mint leaves.

4.   Combine. In a large bowl, toss the cooled wheat berries with the cucumber, tomatoes, red onion, parsley, and mint. Pour the vinaigrette over and toss well to coat everything evenly.

5.   Finish and serve. Scatter the crumbled feta and toasted pumpkin seeds over the top. Taste for seasoning and add a squeeze more lemon if you like. Serve immediately or refrigerate.

Tips for the Best Wheat Berry Salad

     For a shorter cooking time, soak your wheat berries overnight in cold water, then drain before cooking. They will be ready in about 30 minutes.

     Make it ahead: the salad keeps well in the fridge for up to 3 days. The wheat berries absorb the dressing beautifully and actually improve after a night in the fridge. Add the pumpkin seeds just before serving to keep them crunchy.

     Swap the feta for goat cheese, or leave it out entirely for a vegan version.

     For extra protein, add a can of rinsed chickpeas or shredded roasted chicken.

     This recipe also works well warm — toss the hot cooked wheat berries straight into the vinaigrette for a comforting grain bowl instead of a cold salad.
