Warm Rye Berry Porridge with Apples, Cinnamon & Toasted Walnuts
Makes: 4 servings | Prep time: 10 minutes (plus optional overnight soak) | Cook time: 35–60 minutes
Ingredients
• 1 cup whole rye berries, soaked overnight (optional) and drained
• 3 cups water, or a mix of water and milk (dairy or plant-based)
• 1 cinnamon stick (or 1 teaspoon ground cinnamon)
• Pinch of salt
• 1 medium apple, cored and diced
• ¼ cup raisins (optional)
• 2 tablespoons maple syrup or honey, plus more to taste
• ¼ cup walnuts, toasted and roughly chopped
• Splash of milk or cream, to finish
Instructions
1. Combine the rye berries, water (or water-milk mix), cinnamon stick, and salt in a medium saucepan. Bring to a boil over medium-high heat.
2. Reduce to a gentle simmer and cover partially. Cook for 35 to 40 minutes if the rye berries were soaked overnight, or 50 to 60 minutes if unsoaked, stirring occasionally, until the grains are tender but still pleasantly chewy.
3. In the last 10 minutes of cooking, stir in the diced apple and raisins, if using, so they soften without turning to mush.
4. Remove the cinnamon stick. Stir in the maple syrup and taste — add a touch more if you like it sweeter.
5. Spoon into bowls and top with the toasted walnuts and a splash of milk or cream. Serve warm.
Tips for the Best Rye Berry Porridge
• Soak the rye berries overnight in cold water to shave 15 to 20 minutes off the cooking time and soften the chew slightly.
• Make it ahead: this porridge reheats beautifully. Store in the fridge for up to 4 days and loosen with a splash of milk when reheating.
• Swap the apple for pear, or add a handful of fresh berries at the end instead of raisins.
• For extra protein, stir in a spoonful of nut butter or a scoop of plain yogurt just before serving.
• No walnuts on hand? Toasted pumpkin seeds or slivered almonds work just as well.
