Rye Berry Salad with Feta, Cucumber & Dill

There is a particular kind of grain salad that tastes like it belongs at a seaside taverna, even when you made it in your own kitchen ten minutes ago. This is that salad.

Chewy rye berries. Crisp cucumber. Briny feta. A generous handful of fresh dill that makes the whole bowl smell green and bright the second you open the lid. It is simple food, but it is the kind that disappears fast.

Why Rye Works So Well Here

Most grains turn soft and mushy after a day or two in dressing. Rye berries do not. Their dense bran layer keeps the kernel firm and pleasantly chewy, even after several days in the fridge, which makes this salad genuinely useful for meal prep, not just a nice idea on a Sunday.

Rye is also nutritionally serious. Whole grain rye delivers roughly 14 to 15 grams of fibre per 100 grams dry, plus a meaningful amount of protein, magnesium, and iron. Add that to a salad already carrying protein from the feta, and you have a lunch that actually holds you until dinner.

Ingredients

For the salad:

     1 cup organic whole grain rye, rinsed

     1 English cucumber, diced

     1 cup cherry tomatoes, halved

     ½ red onion, finely diced

     ⅔ cup crumbled feta cheese

     ⅓ cup fresh dill, chopped

     ¼ cup pitted kalamata olives, halved (optional)

For the dressing:

     3 tablespoons extra-virgin olive oil

     2 tablespoons fresh lemon juice

     1 teaspoon lemon zest

     1 small garlic clove, minced

     ½ teaspoon dried oregano

     Salt and black pepper to taste

Instructions

1.   Cook the rye berries. Place rinsed rye berries in a medium pot with 3 cups of cold water and a pinch of salt. Bring to a boil, then reduce to a gentle simmer. Cover partially and cook for 45-60 minutes, until tender but still chewy. Drain and spread on a baking sheet to cool.

2.   Make the dressing. Whisk together the olive oil, lemon juice, lemon zest, garlic, and oregano in a small bowl. Season with salt and pepper, then taste and adjust.

3.   Prep the vegetables. While the rye cools, dice the cucumber, halve the tomatoes, and finely dice the red onion. Chop the dill.

4.   Combine. In a large bowl, toss the cooled rye berries with the cucumber, tomatoes, red onion, dill, and olives. Pour the dressing over and toss well.

5.   Finish and serve. Scatter the feta over the top just before serving. Taste for seasoning and add an extra squeeze of lemon if you like.

Tips for the Best Rye Berry Salad

     For a shorter cook time, soak the rye berries overnight in cold water, then drain before cooking, they will be ready in about 30 minutes.

     This salad keeps well in the fridge for up to 3 days. The rye actually absorbs the dressing nicely and tastes even better the next day. Add the feta just before serving so it does not get lost in the dressing.

     Leave out the feta, or swap for a plant-based alternative, for a vegan version.

     For extra protein, add a can of rinsed chickpeas or some flaked grilled salmon.

     Rye also works warm, toss the freshly cooked, still-warm berries straight into the dressing for a cozy grain bowl instead of a cold salad.
