Why Mill Your Flour Fresh?
Flour Was Never Meant to Sit on a Shelf for Months
For generations, flour was milled fresh, used within hours or days of grinding.
Today, typical commercial white flour is heavily refined and designed for shelf stability, not nutrition. When you mill your own flour from whole wheat kernels, you restore flour to its original state: complete, fresh, and alive with nutrition.
Milling flour fresh from whole wheat kernels preserves all three parts of the grain: the bran, very high in dietary fibre and vitamin Bs, minerals and phytonutrients; the germ, high in quality protein, healthy fats, vitamins E, minerals and antioxidants; and the endosperm, high in starch and protein.
On the other hand, to extend shelf life and enhance fineness, commercial white flour is made by removing two essential parts of the wheat kernel - the bran and the germ - and then partially enriched synthetically
